  • 1 1/2 c. sifted all-purpose flour
  • 1 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 2/3 c. oil
  • 2 eggs
  • 1 c. shredded carrots
  • 1 tsp. vanilla
  • 1 c. pecans

    Mix first 6 ingredients.

    Add last 5 ingredients.

    Bake at 350° in a greased and slightly floured pan about 35 minutes or until done.
