- 4 medium carrots, grated (about 3 c.)
- 1/2 c. pecans, chopped
- 2 c. all-purpose flour
- 1/2 tsp. soda
- 2 tsp. baking powder
- 2 tsp. cinnamon (I use 4 or 5 tsp.)
- 1 tsp. salt
- 2 c. sugar
- 1 1/2 c. salad oil
- 4 eggs
- 1 tsp. vanilla
Directions

1Mix oil, sugar, and eggs together and then all other ingredients.

2Bake at 350 degrees in a 9 x 13 inch pan.

3Cook for about 35 to 40 minutes.

4The trick to a good carrot cake is to not overcook.

5Frost when cool.
