- 4 eggs
- 2 c. flour
- 1 1/2 c. vegetable oil
- 2 1/2 c. sifted flour
- 1 tsp. cinnamon
- 2 tsp. baking soda
- 1/2 tsp. salt
- 3 c. grated raw carrots
- 1 c. chopped nuts (optional)
Directions

1Beat eggs.

2Add sugar and oil; mix very well.

3Sift together dry ingredients; be generous with the cinnamon.

4Mix in.

5Stir in carrots and nuts.

6Pour into 3 prepared 9-inch round layer pans. Bake at 350° for 35 minutes.

7Or, bake in 2 Bundt pans (1 Bundt and 2 small loaves work, too) for 45 to 50 minutes.

8Check with a toothpick.
