  • 2 c. flour
  • 2 tsp. baking powder
  • 1 1/2 tsp. soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 2 c. sugar
  • 1 1/2 c. oil
  • 4 eggs
  • 2 c. grated carrots
  • 1 small can crushed pineapple, drained (reserve juice)
  • 1/2 c. chopped walnuts

Directions

    Mix together the first 5 ingredients.

    Add the sugar, oil and eggs; mix well.

    Stir in the carrots, pineapple and walnuts.

    Bake in greased and floured 9 x 13-inch pan at 350° for 45 to 50 minutes.
