- 2 c. sugar
- 2 c. flour
- 2 tsp. baking soda
- 1 tsp. salt
- 3 tsp. cinnamon
- 1 1/2 c. vegetable oil
- 4 eggs
- 3 c. grated carrots
- 1 c. chopped nuts (optional)
- 1 tsp. vanilla
Directions

1Sift together sugar, flour, soda, salt and cinnamon.

2Stir in oil.

3Add eggs one at a time, mixing well after each addition.

4Add carrots, nuts and vanilla, mixing thoroughly.

5Pour into a floured and greased 13 x 9 x 2-inch cake pan.

6Bake in a 350° oven for 30 minutes.

7Cool in pan.
