  • 1 1/4 c. salad oil
  • 2 c. sugar
  • 2 c. flour
  • 2 tsp. baking powder
  • 3 c. grated carrots
  • 1 tsp. soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 4 eggs
  • 1 c. chopped nuts

    Combine oil and sugar.

    Sift 1/2 dry ingredients into sugar mixture; blend.

    Sift in remaining dry ingredients alternately with eggs, one at a time, mixing well after each addition.

    Add carrots and mix well, then mix in nuts.

    Bake in a 325° oven approximately 1 hour and 10 minutes in lightly oiled 10-inch tube pan.

    Cool in pan upright.
