- 1 1/4 c. salad oil
- 2 c. sugar
- 2 c. flour
- 2 tsp. baking powder
- 3 c. grated carrots
- 1 tsp. soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 4 eggs
- 1 c. chopped nuts
Directions

1Combine oil and sugar.

2Sift 1/2 dry ingredients into sugar mixture; blend.

3Sift in remaining dry ingredients alternately with eggs, one at a time, mixing well after each addition.

4Add carrots and mix well, then mix in nuts.

5Bake in a 325° oven approximately 1 hour and 10 minutes in lightly oiled 10-inch tube pan.

6Cool in pan upright.
