- 2 c. sugar
- 4 eggs
- 2 1/2 c. self-rising flour
- 1/2 tsp. cinnamon
- 1 c. oil
- 1 tsp. vanilla
- 1 1/2 tsp. baking soda
- 2 c. grated carrots
Directions

1Mix sugar, oil, eggs and vanilla.

2Slowly add dry ingredients which have been sifted together.

3Fold in carrots.

4Bake in three layers at 350° for 20 to 25 minutes.

5Let cool and frost with Cream Cheese Icing.
