- 1 1/2 c. oil
- 2 c. sugar
- 4 eggs, well beaten
- 2 c. plain flour
- 1 c. pecan pieces
- 1 tsp. salt
- 2 tsp. cinnamon
- 2 tsp. soda
- 2 tsp. baking powder
- 3 c. grated carrots
Directions

1Mix oil and sugar. Beat well. Add eggs and blend. Sift dry ingredients twice and add nuts to dry ingredients. Blend thoroughly with other mixture. Add carrots a small amount at a time and blend well. Turn into 3 paper-lined cake pans. Bake at 325° for 30 minutes. Cool thoroughly.
