  • 1 1/2 c. oil
  • 2 c. sugar
  • 4 eggs, well beaten
  • 2 c. plain flour
  • 1 c. pecan pieces
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 2 tsp. soda
  • 2 tsp. baking powder
  • 3 c. grated carrots

Directions

    Mix oil and sugar. Beat well. Add eggs and blend. Sift dry ingredients twice and add nuts to dry ingredients. Blend thoroughly with other mixture. Add carrots a small amount at a time and blend well. Turn into 3 paper-lined cake pans. Bake at 325° for 30 minutes. Cool thoroughly.
