  • 2 c. flour
  • 2 c. sugar
  • 1 1/2 c. Wesson oil
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 4 whole eggs
  • 3 c. grated carrots
  • 1 tsp. vanilla
  • 1 pkg. powdered sugar
  • 1 stick (1/2 c.) butter or margarine
  • 1 (8 oz.) pkg. cream cheese
  • 1 c. chopped pecans
  • 1 tsp. vanilla

Directions

    In a large bowl, mix the flour, sugar, oil, baking soda, cinnamon, eggs, grated carrots and vanilla together. Pour into a greased and floured 9 x 12-inch pan. Bake in a preheated 350° oven for 45 minutes or until cake tester comes out clean.
