- 2 c. sugar
- 1 1/2 c. Wesson oil
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 4 whole eggs
- 3 c. grated carrots
- 1 tsp. vanilla
- 1 pkg. powdered sugar
- 1 stick (1/2 c.) butter or margarine
- 1 (8 oz.) pkg. cream cheese
- 1 c. chopped pecans
- 1 tsp. vanilla
Directions

1In a large bowl, mix the flour, sugar, oil, baking soda, cinnamon, eggs, grated carrots and vanilla together. Pour into a greased and floured 9 x 12-inch pan. Bake in a preheated 350° oven for 45 minutes or until cake tester comes out clean.
