- 1 c. sugar
- 1/2 c. oil
- 1 1/2 c. all-purpose flour
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. soda
- 1/4 tsp. salt
- 1 c. grated carrots
- 2 eggs
- 1/2 c. chopped nuts (optional)
Directions

1Beat sugar and oil; add flour, baking powder, cinnamon, soda and salt.

2Add eggs one at a time, beating well after each addition.

3Stir in carrots and nuts.

4Bake at 350° for 45 to 50 minutes in a greased 9 x 5 x 3-inch loaf pan.
