  • 1 c. sugar
  • 1/2 c. oil
  • 1 1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. soda
  • 1/4 tsp. salt
  • 1 c. grated carrots
  • 2 eggs
  • 1/2 c. chopped nuts (optional)

Directions

    Beat sugar and oil; add flour, baking powder, cinnamon, soda and salt.

    Add eggs one at a time, beating well after each addition.

    Stir in carrots and nuts.

    Bake at 350° for 45 to 50 minutes in a greased 9 x 5 x 3-inch loaf pan.
