  • 2 tsp. soda
  • 1 tsp. salt
  • 4 eggs
  • 1 tsp. vanilla
  • 1/2 c. pecans
  • 2 c. sugar
  • 2 tsp. cinnamon
  • 1 c. oil
  • 3 c. shredded carrots

Directions

    Combine soda, flour, sugar, salt and oil.

    Beat in eggs, 1 at a time.

    Add carrots, vanilla and pecans.

    Pour into 2 greased 9-inch pans.

    Bake at 375° for 30 minutes.
