- 2 c. all-purpose flour
- 2 c. sugar
- 1/2 tsp. salt
- 1 tsp. baking soda
- 2 tsp. ground cinnamon
- 3 eggs
- 1 1/2 c. vegetable oil
- 2 c. finely grated carrots
- 1 tsp. vanilla extract
- 1 c. well drained, crushed pineapple
- 1 c. shredded coconut
- 1 c. chopped nuts, divided
Directions

1In a mixing bowl, combine dry ingredients.

2Add eggs, oil, carrots and vanilla; beat until combined.

3Stir in pineapple, coconut and 1/2 cup of nuts.

4Pour into greased 13 x 9 x 2-inch baking pan.

5Bake at 350° for 50 to 60 minutes or until cake tests done.

6Cool.
