- 2 c. sugar
- 1 1/2 c. oil
- 4 eggs
- 2 c. flour
- 1 tsp. salt
- 2 tsp. baking soda
- 3 tsp. cinnamon
- 2 tsp. vanilla
- 3 c. grated carrots
- 1/2 c. raisins
- 1/2 c. chopped nuts
Directions

1Combine sugar and oil; add eggs.

2Sift flour and other dry ingredients.

3Add to sugar and oil; beat well.

4Add vanilla, grated carrots, nuts and raisins.

5Bake in an oblong pan or three 8-inch layer cake pans which have been well-greased.

6Bake at 325° for 45 minutes.

7When cool, ice with Cream Cheese Icing.
