- 1 3/4 c. sugar
- 4 eggs
- 1 tsp. salt
- 2 tsp. baking powder
- 3 c. grated carrots
- 1 1/2 c. oil
- 2 c. plain flour
- 2 tsp. soda
- 2 tsp. cinnamon
- 1/2 c. grated nuts
Directions

1Mix sugar and oil; cream until fluffy.

2Add eggs, one at a time.

3Sift flour, baking powder, soda, salt and cinnamon together.

4Stir into first mixture; mix well.

5Add carrots and nuts.

6Pour into 2 well oiled and floured pans.

7Bake at 350° for 30 to 40 minutes.

8Cool and frost.
