  • 2 c. sugar
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 2 c. flour
  • 1 c. grated carrots
  • 1 c. chopped nuts
  • 4 eggs
  • 1 1/2 tsp. soda
  • 1 tsp. salt
  • 1 1/2 c. Wesson oil
  • 1 c. crushed pineapple, drained

    Sift dry ingredients.

    Mix oil and sugar; add eggs, one at a time, beating after each.

    Add dry ingredients and mix well.

    Add carrots, drained pineapple and nuts.

    Pour into well-greased round cake pans and bake at 350° for 35 to 40 minutes.
