- 3 c. ground carrots (large blade)
- 1 small pkg. chopped nuts
- 1 1/2 c. Mazola oil
- 2 c. sugar
- 4 eggs
- 2 tsp. cinnamon
- 2 c. flour
- 1 1/2 tsp. baking powder
- 2 tsp. soda
Directions

1Cream the sugar and oil.

2Add eggs, one at a time.

3Add carrots, then dry ingredients.

4Bake in 2 layer pans at 325° for 40 minutes or bake 55 minutes for loaf pan.
