  • 3 c. ground carrots (large blade)
  • 1 small pkg. chopped nuts
  • 1 1/2 c. Mazola oil
  • 2 c. sugar
  • 4 eggs
  • 2 tsp. cinnamon
  • 2 c. flour
  • 1 1/2 tsp. baking powder
  • 2 tsp. soda

Directions

    Cream the sugar and oil.

    Add eggs, one at a time.

    Add carrots, then dry ingredients.

    Bake in 2 layer pans at 325° for 40 minutes or bake 55 minutes for loaf pan.
