  • 2/3 c. vegetable oil
  • 1 c. raw carrot, grated
  • 2 eggs
  • 1/2 c. milk
  • 1/2 c. nuts
  • 1 1/2 c. flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/4 tsp. salt

    Mix sugar and oil.

    Add sifted dry ingredients.

    Add eggs, one at a time, beating well after each addition.

    Add carrot and nuts. Blend well.

    Baking time is 55 minutes in a Bundt pan at 375° for the first 20 minutes, then turn oven to 350° It freezes well, too.
