- 2/3 c. vegetable oil
- 1 c. raw carrot, grated
- 2 eggs
- 1/2 c. milk
- 1/2 c. nuts
- 1 1/2 c. flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/4 tsp. salt
Directions

1Mix sugar and oil.

2Add sifted dry ingredients.

3Add eggs, one at a time, beating well after each addition.

4Add carrot and nuts. Blend well.

5Baking time is 55 minutes in a Bundt pan at 375° for the first 20 minutes, then turn oven to 350° It freezes well, too.
