- 2 c. flour
- 2 c. sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 c. raisins (optional)
- 1 c. nuts (optional)
- 1 tsp. salt
- 1 tsp. cinnamon
- 3 c. shredded carrots
- 1 c. oil
- 4 eggs
Directions

1Grease and lightly flour pan.

2In large mixing bowl, stir together flour, sugar, baking powder, baking soda, salt and cinnamon; add carrots, oil and eggs.

3Mix until moistened.

4Beat at medium speed for 2 minutes.

5Pour into pan and bake at 325° for 50 to 60 minutes or until toothpick comes out clean.

6Cool before adding frosting.
