Ingredients
- 2 c. flour
- 2 tsp. baking powder
- 1 1/2 tsp. soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 2 c. sugar
- 1 1/2 c. cooking oil
- 4 eggs
- 2 c. grated carrots
- 1 can (8 1/2 oz.) crushed pineapple, drained
- 1/2 c. chopped nuts
Directions

1Sift together first five ingredients.

2Add sugar, oil and eggs, mix well.

3Add carrots, drained pineapple and nuts.

4Turn into 3 greased and floured 9-inch layer pans or sheet pan.

5Bake at 350° for 35 to 40 minutes or until done.

6Cool full minute in pans, then turn out and cool on wire racks.

7Fill layers and spread top and sides with Cream cheese Frosting.

8Sprinkle chopped nuts on top.
