  • 3 c. plain flour
  • 2 c. sugar
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. allspice
  • 1 tsp. salt
  • 1 1/2 c. salad oil
  • 4 eggs
  • 3 c. shredded carrots
  • 2 tsp. vanilla flavor
  • 1 tsp. rum flavor (optional)

    Sift together dry ingredients.

    Add other ingredients.

    Mix with electric mixer 3 minutes at medium speed.

    Bake in greased and floured pans at 350° for 35 minutes or until done.

    Cool 10 minutes.

    Remove from pans.

    Cool entirely before adding cream cheese frosting or serve hot from oven without frosting.
