- 2 c. sugar
- 4 eggs
- 2 tsp. soda
- 2 tsp. cinnamon
- 1 1/2 c. oil
- 2 c. flour
- 1 tsp. salt
- 3 c. raw carrots, grated
- 1 (4 oz.) can black walnuts (optional)
Directions

1Cream sugar and oil.

2Add eggs, beaten well.

3Sift flour, soda, salt and cinnamon together.

4Add to mixture and mix well.

5Add carrots and nuts.

6Mix well.

7Bake in loaf or tube pan 1 hour and 10 minutes at 350° or in three 8-inch layer pans for 35 to 40 minutes or until done.

8Cool and frost with Cream Cheese Icing. This cake also is good as a pound cake without icing.
