- 2 c. all-purpose flour
- 2 c. sugar
- 1/2 tsp. salt
- 1 tsp. baking soda
- 2 tsp. cinnamon
- 3 eggs
- 1 1/2 c. vegetable oil
- 2 c. finely grated carrots
- 1 tsp. vanilla
- 1 c. drained, crushed pineapple
Directions

1In a mixing bowl, combine dry ingredients.

2Add eggs, oil, carrots and vanilla. Beat until combined. Stir in pineapple and nuts.

3Pour into a greased 13 x 9 x 2-inch baking pan.

4Bake at 350° for 50 to 60 minutes. Cool. Frost with Cream Cheese Frosting.
