- 2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 5 tsp. cinnamon
- 1 tsp. salt
- 1 1/2 c. salad oil or 1 c. salad oil and pineapple juice
- 4 eggs
- 2 tsp. vanilla
- 2 c. grated carrots
- 1 c. chopped walnuts
- 8 oz. crushed pineapple, drained
Directions

1Mix together the first 6 ingredients, then add the remaining 6 ingredients.

2Bake at 350° in a 13 x 9 x 2-inch pan for 50 to 55 minutes.
