  • 2 c. flour (white or whole wheat)
  • 2 c. sugar or 1/2 c. sugar and 1 c. raisins
  • 2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 5 tsp. cinnamon
  • 1 tsp. salt
  • 1 1/2 c. salad oil or 1 c. salad oil and pineapple juice
  • 4 eggs
  • 2 tsp. vanilla
  • 2 c. grated carrots
  • 1 c. chopped walnuts
  • 8 oz. crushed pineapple, drained

Directions

    Mix together the first 6 ingredients, then add the remaining 6 ingredients.

    Bake at 350° in a 13 x 9 x 2-inch pan for 50 to 55 minutes.
