- 1 1/4 c. oil
- 2 c. sugar
- 4 eggs
- 2 c. flour
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 2 tsp. baking powder
- 3 c. grated carrots
- 1 c. chopped nuts
- 2 tsp. baking soda
Directions

1Cream oil and sugar together.

2Add eggs one at a time.

3Mix flour and other spices and add a little at a time, stirring well. Fold in carrots and nuts.

4Bake in layer pans or oblong pan.

5Bake at 350° for 30 to 35 minutes.

6Frost with a cream cheese frosting.
