- 2 c. flour
- 2 1/2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 c. oil
- 2 c. sugar
- 1 (8 oz.) can crushed pineapple
- 1 1/3 c. coconut
- 1/2 c. chopped nuts
- 3 eggs
Directions

1Combine flour, soda, cinnamon and salt and set aside.

2In large bowl, beat oil, sugar and eggs.

3Add flour mixture and beat until smooth.

4Blend in pineapple with liquid, carrots, coconut and nuts.

5Pour into 13 x 9-inch greased pan.

6Bake 55 to 60 minutes at 350°.
