  • 2 c. sugar
  • 4 eggs
  • 1 1/2 c. vegetable oil
  • 2 c. flour
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 3 c. raw grated carrots (5 to 7 carrots)
  • 1 c. chopped walnuts

Directions

    Mix sugar, eggs and vegetable oil well. Add flour, baking soda, cinnamon, salt, carrots and walnuts and blend. Bake at 325° in 1 layer in 9 x 13 pan for 45 to 55 minutes or in 2 layers in 8 x 8 pans for 40 minutes or in 3 loaf pans for 55 minutes.
