- 1 lb. carrots
- 2 c. sugar
- 1 1/2 c. vegetable oil
- 4 eggs
- baking powder
- 2 tsp. baking soda
- 2 tsp. salt
- 1/2 c. chopped pecans
Directions

1Preheat the oven to 350°.

2Wash the whole carrots.

3Trim off the top and small lower end.

4Grate each carrot stick until you have one pound of carrot shreds (it measures to about 3 cups). Combine the sugar and vegetable oil in a large bowl.

5Add the eggs, one at a time.

6Beat well.

7Sift the flour, baking powder, baking soda and salt.

8Add this dry combination to the oil mixture, while constantly beating.

9Add carrots and nuts and blend well.
