  • 4 eggs, well beaten
  • 2 c. sugar
  • 1 1/2 c. oil
  • 1 tsp. vanilla
  • 2 c. flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 2 c. shredded carrots
  • 1 c. chopped nuts

Directions

    Combine eggs, sugar, oil and vanilla; mix well.

    Add flour, baking powder, soda, salt and cinnamon; mix well.

    Stir in carrots and nuts.

    Bake in greased 9 x 13-inch pan at 350° for 40 minutes. When cake is cool, ice with Cream Cheese Icing.
