Ingredients

  • 2 c. all-purpose flour
  • 2 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 3 c. finely shredded carrot (9 carrots)
  • 1 c. cooking oil
  • 4 eggs
  • Cream Cheese Frosting

Directions

    Grease and lightly flour a 13 x 9 x 2-inch baking pan.

    In a large mixing bowl, stir together flour, sugar, baking powder, baking soda, salt and cinnamon; add carrots, oil and eggs.

    Mix until moistened; beat at medium speed of electric mixer for 2 minutes.

    Pour into preferred (13 x 9 x 2-inch) baking pan.

    Bake in a 325° oven for 50 to 60 minutes or until wooden pick inserted in center comes out clean.

    Cool thoroughly on wire rack.

    Frost with Cream Cheese Frosting.
