- 2 c. all-purpose flour
- 2 c. sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. ground cinnamon
- 3 c. finely shredded carrot (9 carrots)
- 1 c. cooking oil
- 4 eggs
- Cream Cheese Frosting
Directions

1Grease and lightly flour a 13 x 9 x 2-inch baking pan.

2In a large mixing bowl, stir together flour, sugar, baking powder, baking soda, salt and cinnamon; add carrots, oil and eggs.

3Mix until moistened; beat at medium speed of electric mixer for 2 minutes.

4Pour into preferred (13 x 9 x 2-inch) baking pan.

5Bake in a 325° oven for 50 to 60 minutes or until wooden pick inserted in center comes out clean.

6Cool thoroughly on wire rack.

7Frost with Cream Cheese Frosting.

8Serves 12 to 15.
