  • 3 c. carrots, grated
  • 1 1/2 c. oil
  • 3 eggs
  • 2 c. sugar
  • 1 tsp. vanilla
  • 2 1/2 c. sifted flour
  • 1 tsp. salt
  • 1 tsp. soda
  • 2 tsp. baking powder
  • 1 c. pecans, chopped

Directions

    Combine oil, eggs, sugar and vanilla.

    Combine all dry ingredients and add to sugar mixture.

    Add apples and chopped nuts.

    Bake in 9 x 13-inch pan at 350° for 40 minutes.

    Top with Cream Cheese Frosting.
