- 1 1/2 c. oil
- 2 c. sugar
- 4 eggs
- 2 c. flour
- 2 tsp. soda
- 3 tsp. cinnamon
- 2 tsp. vanilla
- 3 c. grated carrots
- 1 c. raisins (optional)
- 1 c. chopped walnuts (optional)
Directions

1Combine sugar and oil.

2Add eggs.

3Sift flour, soda, salt and cinnamon together.

4Add to sugar mixture; beat well.

5Add vanilla and grated carrots.

6Bake in three 8-inch layer cake pans which have been well-greased.

7(It is very easy to serve when baked in a 9 x 13-inch pan instead.)

8Bake at 325° for 45 minutes.

9When cool, ice with cream cheese icing.

10Yields 3 layers.
