  • 2 1/4 c. flour
  • 1 c. sugar
  • 1 c. packed brown sugar
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1/2 c. raisins
  • 2 c. raw shredded carrots
  • 1/2 c. chopped nuts
  • 3/4 c. cooking oil
  • 1 tsp. vanilla
  • 3 eggs

Directions

    Combine the above in a large bowl.

    Beat 1 minute at low speed, 2 minutes at medium speed and pour batter into pan, greased and floured.

    Bake at 350° for 45 to 50 minutes or until top springs back when touched lightly in center.
