- 3/4 c. vegetable oil
- 2 eggs
- 2 1/2 c. sifted flour
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 1 c. nuts
- 1 c. raisins (optional)
- 1 c. grated raw carrots
Directions

1Stir sugar, oil and eggs to blend well.

2Add sifted dry ingredients.

3Mix in carrots and nuts.

4Bake in greased and floured loaf pan 55 minutes at 375° or until cake tests done.
