  • 3/4 c. vegetable oil
  • 2 eggs
  • 2 1/2 c. sifted flour
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 c. nuts
  • 1 c. raisins (optional)
  • 1 c. grated raw carrots

    Stir sugar, oil and eggs to blend well.

    Add sifted dry ingredients.

    Mix in carrots and nuts.

    Bake in greased and floured loaf pan 55 minutes at 375° or until cake tests done.
