- 4 eggs
- 1 c. vegetable oil
- 2 c. sugar
- 1 tsp. vanilla
- 1 lb. peeled carrots, cut into 1-inch chunks
- 2 c. flour
- 1 Tbsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 2 tsp. cinnamon
Directions

1Blend eggs, oil, sugar and vanilla in a food processor bowl until smooth.

2Slowly add carrots (through the feed tube).

3When carrots appear to be fully grated, remove lid and add flour, baking powder, baking soda, salt and cinnamon.

4Replace lid and blend until the dry ingredients are thoroughly mixed.

5Pour batter into a greased and floured 10-inch tube pan.

6Bake for 1 hour at 350°.
