Ingredients

  • 1 1/2 c. oil
  • 2 c. sugar
  • 3 eggs
  • 2 c. flour
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • 2 tsp. vanilla
  • 1 tsp. salt
  • 7 oz. pkg. coconut
  • 2 c. shredded carrots
  • 1 c. chopped nuts
  • 8 oz. can crushed pineapple, undrained

Directions

    Cream sugar, eggs and oil. Add dry ingredients, mixing well. Add remaining ingredients.

    Pour into greased and floured jelly roll pan. Bake at 350° for 45 minutes. Cool.

    Frost with Cream Cheese Frosting.
