Ingredients

  • 3 c. grated carrots
  • 1 1/2 c. salad oil
  • 2 c. granulated sugar
  • 4 eggs
  • 2 c. sifted flour
  • 2 tsp. baking soda
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 tsp. salt
  • 1 c. chopped walnuts or pecans
  • 1 c. golden raisins
  • 1 tsp. vanilla

Directions

    Blend oil and sugar, add eggs one at at time and sift together dry ingredients. Add gradually while beating.

    Add remaining ingredients and pour into three 9-inch greased and floured cake pans.

    Bake at 350° about 25 minutes, or until cake tests done. Frost with Cream Cheese Frosting.
