- 3 c. grated carrots
- 1 1/2 c. salad oil
- 2 c. granulated sugar
- 4 eggs
- 2 c. sifted flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 tsp. salt
- 1 c. chopped walnuts or pecans
- 1 c. golden raisins
- 1 tsp. vanilla
Directions

1Blend oil and sugar, add eggs one at at time and sift together dry ingredients. Add gradually while beating.

2Add remaining ingredients and pour into three 9-inch greased and floured cake pans.

3Bake at 350° about 25 minutes, or until cake tests done. Frost with Cream Cheese Frosting.
