Ingredients

  • 1 1/2 c. oil
  • 2 c. sugar
  • 4 eggs
  • 2 c. grated carrots or I use 2 jars junior baby food carrots
  • 3 c. flour
  • 3 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 c. chopped nuts
  • 1 pinch salt

Directions

    Mix together first 4 ingredients.

    Add flour, soda and cinnamon.

    Add chopped nuts and salt.

    Blend all together.

    Bake in a Bundt pan or fluted pan approximately 1 hour.

    Test with a toothpick for doneness.

    May ice with vanilla or cream cheese frosting.
