- 1 1/2 c. oil
- 2 c. sugar
- 4 eggs
- 2 c. grated carrots or I use 2 jars junior baby food carrots
- 3 c. flour
- 3 tsp. baking soda
- 2 tsp. cinnamon
- 1 c. chopped nuts
- 1 pinch salt
Directions

1Mix together first 4 ingredients.

2Add flour, soda and cinnamon.

3Add chopped nuts and salt.

4Blend all together.

5Bake in a Bundt pan or fluted pan approximately 1 hour.

6Test with a toothpick for doneness.

7May ice with vanilla or cream cheese frosting.
