  • 2 c. sugar
  • 4 eggs, beaten
  • 3 c. grated carrots
  • 2 c. flour
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 2 tsp. soda
  • 1/2 tsp. salt
  • 1 c. chopped walnuts
  • 1 c. currants

    Add eggs; mix well.

    Sift dry ingredients; add to egg mixture.

    Add carrots, nuts and currants.

    Bake in a greased 9 1/2 x 13-inch pan at 300° for a little over an hour.
