- 2 c. sugar
- 1 1/2 c. oil
- 4 small jars baby carrots
- 4 eggs
- 1 tsp. vanilla
- 1 tsp. cinnamon
- 3 c. sifted flour
- 3 tsp. baking powder
- 3 tsp. baking soda
- 1/2 tsp. salt
- 1 c. chopped walnuts
Directions

1Sift flour one time and measure.

2Add baking powder, soda, salt and cinnamon; sift again.

3Combine sugar and oil in separate bowl.

4Beat thoroughly.

5Add carrots; blend well.
-
6Add eggs, one at a time; beat after each.

7Add vanilla.
-
8Gradually blend in dry ingredients.
-
9Add nuts and blend.
-
10Grease tube pan.
-
11Bake at 350° (preheated oven) for 1 hour and 15 minutes.

12(Secret is in the blending; blend well.)

13Frost or use powdered sugar when cool.
