Ingredients

  • 2 c. sugar
  • 1 1/2 c. oil
  • 4 small jars baby carrots
  • 4 eggs
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 3 c. sifted flour
  • 3 tsp. baking powder
  • 3 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. chopped walnuts

    Sift flour one time and measure.

    Add baking powder, soda, salt and cinnamon; sift again.

    Combine sugar and oil in separate bowl.

    Beat thoroughly.

    Add carrots; blend well.

    Add eggs, one at a time; beat after each.

    Add vanilla.

    Gradually blend in dry ingredients.

    Add nuts and blend.

    Grease tube pan.

    Bake at 350° (preheated oven) for 1 hour and 15 minutes.
