- 3 c. all-purpose flour
- 3 c. grated carrots
- 3 eggs, well beaten
- 2 c. sugar
- 1 c. crushed pineapple, undrained
- 1 c. vegetable oil
- 1 c. pecans or walnuts
- 2 tsp. baking soda
- 3 tsp. cinnamon
- 2 tsp. vanilla extract
- 1/2 tsp. salt (optional)
Directions

1Mix dry ingredients, including carrots, together.

2Stir in eggs, oil, vanilla and pineapple.

3Add nuts.

4Beat on medium speed.

5Preheat oven to 350°.

6Place batter into 3 greased and floured cake pans.

7Bake 30 minutes or until center is done. Cool.

8Frost with Cream Cheese Frosting.
