  • 2 c. sifted flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 1/2 c. salad oil
  • 2 c. sugar
  • 4 eggs
  • 2 c. finely grated carrots
  • 1/2 c. margarine
  • 1 (8 oz.) cream cheese
  • 1 pkg. confectioners sugar
  • 1 c. chopped nuts
  • 1 tsp. vanilla

Directions

    Sift first 5 ingredients together and set aside.

    Combine oil and sugar; mix well and add one at a time to your eggs.

    Beat well after each addition.

    Gradually add your dry ingredients and your grated carrots.

    Bake in 350° oven until done (will make 3 layers).
