- 2 c. flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 3 eggs, beaten
- 3/4 c. vegetable oil
- 3/4 c. milk
- 2 c. sugar
- 2 tsp. vanilla
- 1 (8 oz.) crushed pineapple, drained
- 2 c. grated carrots
- 1 (3 1/2 oz.) can flaked coconut
- 1 c. chopped nuts
Directions

1Preheat oven to 350°.

2Generously grease cake pan.

3Sift flour, soda, cinnamon and salt together; set aside.

4Combine eggs, oil, milk, sugar and vanilla; mix well.

5Add flour mixture, pineapple, carrots, coconut and nuts.

6Stir well; pour into pan.

7Bake for 45 to 50 minutes or until toothpick comes out clean.

8Frost with Cream Cheese Frosting, if desired.
