  • 2 c. sugar
  • 4 whole eggs
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 3 1/3 c. grated carrots
  • 1 c. nuts, chopped fine
  • 2 c. plain flour
  • 2 tsp. baking soda
  • 1 1/2 c. Wesson oil

Directions

    Sift together all dry ingredients.

    Beat eggs into sugar, one at a time.

    Add oil to dry ingredients, a little at a time.

    Add this mixture to eggs and sugar.

    Add carrots and nuts.

    Bake in three 8-inch pans at 350° for 30 minutes.
