- 4 eggs
- 1 1/2 c. oil
- 2 c. flour (plain)
- 2 tsp. salt
- 2 tsp. cinnamon
- 2 tsp. soda
- 3 c. carrots, grated
- 8 oz. cream cheese
- 1 box confectioners sugar
- 1/2 stick margarine
- 1 c. pecans, chopped
- 2 tsp. vanilla
Directions

1Mix sugar and oil; blend and beat eggs into mixture.

2Add sifted flour, salt, soda and cinnamon.

3Add carrots.

4Pour into 2 (9-inch) pans.

5Bake at 350° for 30 minutes.

6Soften cream cheese and margarine.

7Add all other ingredients and mix well.

8Spread on layers.
