  • 2 c. sugar
  • 2 c. flour (plain)
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 3 tsp. cinnamon
  • 1 1/2 c. vegetable oil
  • 4 eggs
  • 3 c. grated carrots or junior Gerber carrots
  • 1 c. chopped nuts
  • 1 tsp. vanilla

    Sift together first 5 ingredients.

    Add oil.

    Beat in eggs, one at a time.

    Add carrots, nuts and vanilla.

    Bake in 3 round pans at 350° until cake is done.

    Ice cake with cream cheese icing.
