  • 3 c. flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 2 c. sugar
  • 1 1/2 c. cooking oil
  • 1 c. crushed pineapple, drained
  • 1 c. walnuts or pecans, diced
  • 1 1/2 tsp. vanilla
  • 2 eggs, lightly beaten
  • 2 c. grated carrots

    Bake at 350° in a 9 x 13-inch pan or 10-inch tube pan for 1 hour and 20 minutes, or until tester comes out clean.
