  • 2 c. sugar
  • 1 1/4 c. oil
  • 4 eggs
  • 2 c. flour
  • 2 tsp. soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 3 c. carrots, grated (raw)
  • 1/2 c. black walnuts

Directions

    Mix sugar and oil; add eggs and beat well.

    Sift flour, soda, cinnamon and salt and add to mixture.

    Fold in carrots and nuts. Bake in tube pan for 1 hour at 300°.
