- 2 c. flour
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. soda
- 1 1/2 tsp. salt
- 2 c. sugar
- 4 eggs
- 1 1/2 c. oil
- 2 c. grated carrots
- 1 (13 oz.) can crushed pineapple, drained
- 1/2 c. nuts
- 1 c. coconut (optional)
- 1 c. raisins (optional)
Directions

1Sift flour, baking powder, cinnamon, soda and salt.

2Mix together sugar, eggs and oil.

3Add sifted ingredients, carrots, drained pineapple, nuts, coconut and raisins.

4Pour into a greased and floured pan.

5Bake at 350° for 40 to 50 minutes.
