- 2 c. sugar
- 1 tsp. salt
- 2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 4 eggs
- 1 1/2 c. cooking oil
- 3 c. grated carrots
- 1/2 c. chopped pecans
- 1 tsp. vanilla
- 1 cream cheese frosting
- 16 oz. confectioners sugar
- 8 oz. cream cheese
- 1 stick margarine
- 1 c. chopped pecans (optional)
- 1 tsp. vanilla
Directions

1Mix together all dry ingredients and set aside; combine eggs, oil, carrots and pecans until well blended.

2Gradually add dry ingredients.

3Mix at a low speed until sugar dissolves (approximately 2 minutes).

4Bake at 300° for 50 minutes or until cake begins to pull away from sides of the pan.
