- 2 1/3 c. flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 1/2 tsp. salt
- 2 c. sugar
- 3 medium eggs
- 1 1/2 c. oil
- 2 2/3 c. grated carrots
- 2/3 c. crushed pineapple, drained
- 2/3 c. pecans, chopped fine
Directions

1Mix well the first 5 ingredients and add the eggs, oil, carrots, pineapple and pecans. Mix on medium speed until batter is smooth and shiny. Pour batter into 9-inch cake pans that have been greased and lined with wax paper. Bake at 350° for 40 minutes or until cake springs back when pressed in middle with fingers. Cool to warm temperature before icing.
